The Club at Olde Stone, KY, a private golf and lifestyle community in the hills of Kentucky, is making important strides to increase environmental stewardship. The club recently started recycling and composting programs, and club chefs planted an herb garden just outside the dining room. The garden is a convenient and healthful way to use local ingredients, and provides flavor found only in herbs picked fresh from the earth.
The club is also hoping to earn the “Green Restaurant” designation, working with the Green Restaurant Association (GRA), a non-profit organization whose mission is to blend environmental sustainability with cost effectiveness and convenience. If The Club at Olde Stone does earn this recognition, it will be one of only 52 Green Restaurant certified restaurants.
